Wilder

Each day, we prepare a wide variety of handmade pastries from scratch starting with quality ingredients, a bit of know-how, and a lot of love. We look forward to sharing not just these fresh, delicious pastries and coffees, but also a sense of tradition- food made with patience and intuition, finished with a touch of artistry, and most importantly, made with the intention to help you slow down, savor, and share a soul-nourishing moment with a friend or loved one over a simple yet uncommon treat.

Summer HOurs:

 

Welcome! Wilder Bakeshop is open Thursday, Friday, Saturday, and Sunday from 7am-1pm (or sold out).

I make an average of 200 pastries for sale each day. Everything is made from scratch; every jam, custard, whipped cream, meringue, caramel sauce, chocolate ganache, vanilla syrup, bread, pie, cookie, and croissant dough, each cake and muffin batter. The quiche custard is made from hand cracked fresh eggs (nearly 20 dozen each weekend!) After all the individual components are made, I roll, form, and assemble everything individually with my own two hands, let the yeasted items rise over night, assemble items before they go in the oven, and hand finish each one with glaze, whipped cream, or fresh fruit after it comes out of the oven- all this before arranging the little pastry gems on their trays by 7am! Let’s be real, they might not all be arranged in the case until 7:15 am- its the curse of perfectionism!


Special Orders:

 

Unfortunately, due to the above mentioned workload and trying to maximize daily café hours (avoiding early sell-outs) I will not be taking any special orders this season. No birthday cakes, no wedding cakes, no large assorted pastry orders above the amount I typically make for the day. If you need more than 6 pastries for some birthday, anniversary, meeting, etc. you are welcome to call ahead or email me and I will hold them for you off the daily bake. I will not be making special items, or ultra-large batches so you can have 3 dozen sticky buns, etc. I know this may be frustrating for some of you or hard to understand, but what it comes down to is I can’t sacrifice everyone else’s experience in order to satisfy one person’s wish. Thank you for understanding.


Food Menu:

 

This season, I will be offering the 1lb quiches, the classic savory breakfast croissant sandwiches: ham and cheese croissant, and monte cristo croissant, and at least one of the vegetarian croissants each day like the artichoke pesto mozzarella, the heirloom caprese with fresh basil (seasonal), the caramelized onion and goat cheese, and other new seasonal offerings!

I will not be making anything to order. I will not be accommodating any special requests or substitutions. Nothing is vegan, nothing is gluten free. Just one me, remember? and I’m not offering personal chef services at this time (or ever).
